Sudoku difficulties are based on how much info is available. An easy Sudoku puzzle should be solvable using the basic comprehension of the rules. The difficult levels force you to look three or four moves deep. Like, if this is a 3, then that would have to be a 4, and that would have to be a 7 so... no that doesn't work. Its not so much guessing as chess-like.

OK, obviously I'm not to that level, yet.
What I do is go through every item on every line and see if there is definite correct item for that space. When I've gone through every permutation on every space in the puzzle and there's nothing else I can do for an correct number, then I pick one with only two possibilities and guess. Half the time I'm right. Then I go back to slogging away at whatever that opened up.

And I guess I do what you described as well, I suppose. I'd probably pick different words to describe the process. But sometimes that runs out and there's nothing left to do but guess. And I hate guessing!

I use Simon Tatham's Puzzle collection, as recommended by narya. One of the games is a Sudoku version called "Solo". It has a lot of different levels - the default is 3 X 3 Trivial. This is the level I use. Only a couple of times have I had to guess - almost always there's at least one square that could only be one possibility. I just narrow it down one by one until the whole thing is solved.
