I'll list some obvious (to me) albums to start off.
In no particular order, but live albums I consider essential to classic rock;

Cash definitely counts, more so than Cohen IMO (just for the purpose of the category, not comparing them as artists).
One could argue live compilations of assorted shows (the Wings and the Springsteen collections for example) aren't the same as albums recording a single great live performance and the special character that one show had. But that would be nitpicking.

Talking Heads - Stop Making Sense. The album is good, but the video is perhaps one of the most visually striking live concerts ever filmed. David Byrne said that music had a visual aspect and I think he really nailed it with that show. I highly recommend it - if you've never watched it you should.

Oh and I was at the Bob Seger concert when they recorded that album in Boston. Right up there with Geils in terms of energy and crowd reaction.
